I really want to finish editing my book this year, but most of the time I have no motivation to do so. I've only just finished a chapter today after slowly working on it all month.

I'd second give it a break if you've only just completed it. You need to change from "writing mode" to "editing mode". Give yourself at least two weeks off, completely, or even a whole month. Then try going back to it.
You could also try editing it in a different room, in a different place, some people even try editing their work by printing it onto different coloured paper to help put them into that editing mind set.
I'd say finish editing your work before taking on a new major project, though it depends on who you are and how much time you have... What you don't want to do is find you start a new project, then lose the spark you had to get this far, and end up in a vicious cycle of never having any completed (polished edited) work to show for all those hours you've put into those projects.
Maybe break it down into manageable chunks then reward yourself upon completing each chunk. Keep a copy of your original, and return to it so you can see your progress too.
Reading is a good way to start any writing process, whether its reading a few poems, a scene from a play, or thirty pages from a novel.
My tip would be to read a few chapters of a novel in your chosen genre before you start editing.
