When writing dialogue in a fiction novel should it be 'Jane said or said Jane'?

I am no expert but.......
I actually think it doesn't matter, probably somebody will correct me, but I in my opinion it depends on your style of writing.
'I love this cake.' Jane said.
'I love it too' said Jane.
I can't see that it makes too much difference. Also, presumable you won't always use 'said'
