Adrian's a big fan of landmarking. I'm sure he'll correct me when I get this wrong, but I think you write down every key moment in the book and then check they are spead evenly for pacing and that there aren't any that are unnecessary to the plot (or any gapping great holes of nothing between landmarks.)
I do something similar with each chapter, giving every scene in the chapter a short name, noting if they are written in narrative or dialogue and how many pages they take so I can cut down extra-long scenes/conversations. It's a good way of checking you haven't gone off on a tangent and that every little bit is relevant.
