So I've been struggling a bit with my book, especially with trying to get it to flow the way I'd like it to.
Today I had my 'EUREKA' moment where I felt it was starting to get there. So my questions is, do you guys have eureka moments? Or is your writing much more structured?

Writing ad-hock was okay for my first novel. And I found it okay for writing short stories. But when I wanted to write more novels, my writing had to become more structured.
I had loads of ideas in different spreadsheets and word documents. Then I decided to put all my myriad of story ideas into a book. It's been so useful having all this information available in one easy to read source.
Great answers everyone, its great to see other people having such a big mixture of eureka and structure!
For me, I have a solid idea that fuels me and my thoughts, it's my eureka moment that allows me to further this idea and give birth to it enabling me to mold it and shape it into the piece of literature I desire it to be. For instance, my writing is usually inspired by factors that affect society socially and politically like domestic violence. My eureka moment allowed me to take the concept of domestic violence and turn it into a short story that stung the audience as thrilling and passionate. Hope this helps you :)
